Ingredients
- 3 x 70 g butter
- Fleur de sel
- 2 teaspoons of pink peppercorns
- 1 lemon
- 1 lime
- Chives
- Shallot
- Oysters

Step One
Put the butter in a bowl with 2 teaspoons of fleur de sel. Then add 2 teaspoons of pink peppercorns. Mix everything together until you have a smooth consistency (like a cream).
Step Two
Cut the lemon in half, then peel it. Do the same for the lime.
Put the butter in a bowl and add the finely chopped peel of the lemon and the lime.
Add a mixture of the juice from the lemon and the lime. Mix everything together until you have a smooth consistency (like a cream).

Chop a bunch of chives and add them to a bowl with the butter.
Finely chop the shallot and add it to the mixture.

Form the prepared butters into a cylinder wrapped in cling film. Put them in the fridge for 3 hours.
Meanwhile, gently open your oysters with the N°09 Oyster.
Place them on a tray with crushed ice to keep the oysters fresh.
Step Five

Using the bread knife, cut the bread into small slices. Then take your butters out of the fridge and use the spreading knife to spread your various butters on the bread slices.
